This summer it seems like everyone with a garden has an abundance of zucchini. I have so much of it at home given to me by friends and relatives with gardens. The question is, how do I get my kids (and picky adults) to actually eat this healthy vegetable?
Here is a super easy recipe for zucchini pizza:
1. Slice the zucchini in half.
2. Using a spoon, place pizza sauce on the open faced side and spread. (you can use one of those Boboli 5 oz pizza sauce packets)
3. Sprinkle shredded mozzarella or cheddar cheese.
4. Bake at 350 for 20 minutes.
Try it! It’s delicious!!
